Stainless steel, enamel or cast iron? What are the advantages and disadvantages of each material?
All the materials have their advantages, it is usually a question of personal taste.
Enamel is a protection layer of melted glass that protects the metal from corrosion. Consequently, the advantage of enamel is that it is resistant to rust and, moreover, fades little under the influence of high temperatures. Thereby an enamelled surface can be maintained more easily. Because the enamel layer is less flexible than the metal on which it is affixed, it can crack if handled without care and pieces can even break off of it.
The use of sharp objects and thermal shocks (for ex. cooling off a warm bowl with cold water) must therefore be avoided.
The most important characteristic of stainless steel is that it is resistant to rust and it is not breakable, but it will fade under the influence of high temperatures. A stainless steel barbecue is more expensive to buy than the same model with an enamelled steel plate.
Certain barbecue models also have a cast iron bowl. The advantage is that this barbecue can be used as chimney, i.e. also for burning wood. A cast iron bowl is a little heavier and more breakable than the stainless steel bowl.
